Heat butter in a large skillet over medium heat and add onion and garlic. Cook until softened.
Add shrimp, season with salt and pepper and cook for 3 minutes.
Add tomatoes and peppers. Cook for another minute and then add oregano.
Stir to combine and remove from heat.
Heat a separate non-stick skillet and add shredded cheese to melt and form a cheese crust.
Add a El Comal tortilla on top and flip, once flipped add shrimp filling.
Fold and cook until crispy on both sides. Enjoy.
