Steak Tacos with Pickled Onions
Combine onion, cilantro, lime juice, soy sauce, olive oil, brown sugar, oregano, red pepper flakes, garlic and steak in a large sealable plastic bag. Shake bag to distribute marinade. Refrigerate for at least 2 hours.
Preheat outdoor grill or cast iron skillet over medium heat. Cook steak 3 minutes on each side. Transfer to a cutting board and let rest for 10 minutes. Slice against the grain in small strips. Keep warm. Place a few strips on each tortilla. Top with avocado, pickled onions, a sprinkle of cotija cheese, salt, pepper and lime juice. Serve.
Place onion slices, peppercorns and garlic cloves in a large jar. Set aside.
Combine vinegar, sugar and salt in a small saucepan over medium heat. Bring to a boil and immediately pour in jar with onion slices. Set aside to cool. Serve or refrigerate for later use.
