Pescadillas de Camaron
Whisk together garlic salt, pepper, cumin and paprika in a small bowl.
Rinse and drain shrimp. Transfer to a large mixing bowl and add seasoning mixture. Toss to mix well. Set aside.
Heat oil in a large skillet over medium heat.
While oil heats, assemble pescadillas. Place 2-3 tablespoons cheese and 3-4 shrimp on each tortilla. Fold in half. Use a toothpick to close if necessary.
Carefully place pescadilla in hot oil with tongs. Fry on each side for 3 minutes or until tortilla is golden and shrimp have cooked through. Transfer to a paper towel lined plate.
Serve with cilantro springs for garnish.
