 8 El Comal Soft Taco Flour Tortillas
 1 tbsp Cooking oil
 ¼ cup White onion, chopped
 1 lb Ground beef
 1 cup Red enchilada sauce
 1 ½ cups Refried pinto or black beans
Toppings:
 1 ⅓ cups Mexican blend shredded cheese, divided
 Sliced black olives
 Chopped green onions
 Chopped roma tomatoes
Directions:

Preheat oven to 375° F.

Line a large baking sheet with parchment paper and arrange tortillas over the parchment paper. Bake for 5-7 minutes; or until the tortilla edges begin to crisp and are golden. Remove from heat but keep oven on.

Heat oil over medium heat. Add onion and cook for 2 minutes or until tender. Add beef and cook, stirring and breaking up into crumbles. When meat has fully browned, add sauce, stir and cook for 3 minutes. Remove from heat, cover and keep warm.

Spread beans on 2 crispy flour tortillas, top with a thin layer of beef mixture, cover with second crispy flour tortilla. Top with 1/3 cup cheese each, tomatoes, green onions and black olives. Return to oven to melt cheese; about 5 minutes. Remove from oven, serve with sour cream.
