Ingredients:
6 El Comal 100% Whole Wheat Tortillas
Hummus
3 cups Baby Spinach
2 Medium carrots, sliced in long pieces
2 Persian cucumbers, sliced in long pieces
1 Yellow bell pepper, sliced in thin strips
1 Red bell pepper, sliced in thin strips
1 ½ cups Purple cabbage, shredded

In a working surface, spread 2 tablespoons hummus on a tortilla. Top with a layer of spinach. Arrange 6 to 8 pieces of each vegetable horizontally over spinach. Roll tightly, slice in half and arrange on a serving tray. Repeat with remaining tortillas and ingredients. Serve.
