Grilled Buffalo Chicken Quesadilla
Heat grill pan or comal over medium heat.
Combine chicken and buffalo sauce in a medium bowl. Stir to coat well.
Place ¼ cup cheese on a flour tortilla, spread evenly, top with ½ cup buffalo chicken and a second layer of ¼ cup cheese. Top with second tortilla and place on grill pan. Cook on both sides until cheese melts. Repeat with remaining ingredients.
Slice in fourths. Place on a serving dish. Serve with a dollop of sour cream and a sprinkle of cilantro.
