Breakfast Quesadillas

Ingredients:
 3 Bacon strips
 3 Eggs
 1 tsp Dried chives plus more for garnish
 2 El Comal Soft Taco Flour Tortillas
 1 cup Sharp cheddar cheese, shredded and divided
 1 Avocado, sliced

Place bacon slices on a medium skillet over medium heat. Cook until slices are crispy and cooked through. Transfer to a paper towel lined plate and let cool. Chop into small pieces. Wipe skillet clean with a paper towel.

Place eggs, 1 teaspoon dried chives and bacon pieces in a medium bowl. Beat until mixed well. Pour egg mixture into skillet and cook for 3 minutes, folding mixture gently, until eggs are cooked through. Set aside.

Heat comal or skillet over low heat. On a working surface, place ¼ cup cheese on one side of tortilla. Top with half of the cooked egg and top with another ¼ cup cheese. Fold in half and place on comal to melt cheese and tortilla to brown a bit; about 45 seconds on each side. Transfer to cutting board, slice in half and transfer to a serving plate. Repeat with remaining ingredients to make second quesadilla. Sprinkle with more chives and serve with avocado slices.
